Plant-based Recipes for a Cozy Winter Evening

It is a good idea to add more fresh fruits and vegetables in your daily diet. To make a vegetarian dish delicious, use fresh seasonal produce, spices and a touch of love. Pumpkin & Sage Risotto:

Create a healthy version of this classic Italian dish with brown basmati rice. Sauté a few garlic cloves in olive oil. Add almond milk, nutritional yeast, and vegan parmesan. Keep stirring till saucy. Add in 200 gm of roasted pumpkin with allspice. Add in 100 ml of vegetable broth. Cover and cook the rice for 15-20 minutes. In a separate pan, fry a few sage leaves in olive oil. Serve the risotto in a bowl and top it with the crispy sage. You can also store any leftover risotto to make arancini the next day.

Roasted Vegetable Gratin:

Start with melting butter in a pan. Whisk in some flour and butter slowly to make it into a bechamel sauce. Roast some parsnips, carrots, zucchini, whole garlic, and bell pepper. In a baking dish, add the roasted veggies and top with round potatoes. Top with the bechamel sauce and grated cheddar cheese. Sprinkle some rosemary leaves and bake at 350 for 25 minutes. Serve hot with a side of healthy brown rice or crusty bread.

Beetroot Wellington:

Peel and roast the beetroots with a bit of oil and salt for 1 hour. In a pan, sauté some onions and garlic, thyme and mushrooms, until caramelized. Fill the puff pastry with roasted beetroots, mushroom mix and make it into a Wellington shape. Score the top and sprinkle some rosemary sprigs. Bake at 350 for 40 minutes, or until the crust is golden brown. Allow it to cool and cut it into loaves. You can make a red wine gravy to serve with it.

Rosemary Sweet Potato Fries:

A potato side is a delicious accompaniment to any meal. To get started with this one, peel and slice sweet potatoes. Arrange the potatoes in a roasting pan and drizzle over olive oil, rosemary, thyme, salt, and pepper. Roast at 350 for 30 minutes. Turn potatoes to the other side halfway through the roasting process. These sweet potato fries are best served with guacamole and fresh salsa.
